Chef Joyce is the founder and head chef of Wakamama Omakase, the first vegan Japanese omakase restaurant in Singapore, opened in 2021 at ICON @ Pasir Panjang. She has spent over a decade building a plant-based interpretation of traditional Japanese fine dining.
Her philosophy is umami without compromise — koji, miso, kombu and aged fermentation building the depth normally drawn from seafood and dashi, entirely from plants. In these classes you learn the same techniques served at the omakase counter, in the room where they're made.

FAQ
Do I need any cooking experience?
No. Most group classes and menus are designed for complete beginners. If you're more experienced, private sessions can be pitched harder. Everyone starts where they are.
Is the food really all vegan?
Yes — everything is 100% plant-based, with no animal products at any point. The whole point is building restaurant-grade flavour and umami entirely from plants.
Do we eat what we cook?
Yes. Every class ends with a proper sit-down meal of the dishes you've made, plated the Wakamama way. Come hungry.
Can you handle allergies and dietary needs?
Yes — the kitchen is already allium-free and accommodates most dietary requirements. Tell us when you book and we'll adjust the menu.

Can I book a private class for a couple or a group?
Absolutely. Private and couples sessions run on your chosen date with a menu of your choice, and we host corporate buyouts for teams up to twelve. Message us on WhatsApp to arrange.
How is this different from your online classes?
The online school is self-paced and available worldwide. The in-person class is the hands-on version — live correction, the restaurant's own kitchen and ferments, and a meal at the table. Many guests do both.
Can I gift a class?
Yes. Classes make a popular gift for birthdays, anniversaries, and corporate occasions. Gift cards in custom amounts are available.
