Founder & Head Chef, Wakamama Omakase
Chef Joyce is the founder of Wakamama Omakase, the first vegan Japanese omakase restaurant in Singapore — opened in 2021 at ICON @ Pasir Panjang. Classically trained in both Japanese and Western kitchens, she has spent over a decade developing a plant-based interpretation of traditional Japanese fine dining.
Her cooking philosophy centers on umami without compromise — using koji, miso, kombu, and aged fermentation techniques to build the depth normally associated with seafood and dashi, but entirely from plants. The same techniques served at Wakamama's omakase counter are now taught directly through these online courses.

Who teaches the classes? A: Every class is taught by Chef Joyce, the founder and head chef of Wakamama Omakase. She has spent over 2 decades developing vegan adaptations of traditional Japanese fine dining.
Are these classes live or recorded? A: The six main courses are recorded, so you can take them anytime at your own pace. Cooking Club members also get one monthly live online class included with their membership, plus member-only Q&A sessions with Chef Joyce.
What equipment do I need? A: A basic home kitchen is enough for almost every course. You'll want a sharp knife, a good pot, a pan, a blender, and mixing bowls. Specific tools — like a sushi mat or wagashi shaping tool — are flagged on the course page before you enroll, and substitutions are always offered.
Are the classes beginner-friendly? A: Yes. The Foundations, Sunday Brunch, and Wagashi courses are designed for beginners — you'll start from pantry setup and basic technique. Umami Mastery and Plant-Based Sushi are intermediate. Modern Vegan Kaiseki is advanced and assumes you've completed Foundations or have equivalent experience.
